I am excited for Taco Tuesday, really I’m just excited about tacos, at all times, whether I’m making them or not. This month I have stepped away from chicken tacos for the time being, figuring the past two months have been enough chicken for now. I will say this, I have been a little bit of a failure this month with taking photos of the process, but I’m still going to share the recipe.
The pork was where I started, of course and it was rather simple to make. To make the pork you will need:
- 2-2.5 Pounds of boneless pork loin
- 0.5 A yellow onion sliced
- 1 Tablespoon of paprika
- 1 Teaspoon of black pepper
- 2 Teaspoons of salt
- 0.5 A 16oz. bottle of barbeque sauce of your choice
- 2 Garlic cloves minced
- 0.5 Cup of water
To make this is fairly simple, just combine all of the ingredients in your crock pot and cook on medium for six hours or low for eight-ten hours. I personally went for low just because I knew it would be better for my schedule. Once cooked, shred and enjoy!
The coleslaw recipe is also pretty simple and to make the coleslaw you will need:
- 1 16oz bag of coleslaw mix
- 2/3 cup of mayo
- 1/3 cup of white sugar
- 2 tablespoons of apple cider vinegar
- 1/4 teaspoon of salt
- 1/2 teaspoon of celery salt
The directions for this is also simple, just combine all of the ingredients in a bowl and mix together, then refrigerate for one to two hours before serving. If I’m being honest, I kind of halved the recipe and I didn’t refrigerate, I think it turned out fine.
I topped the tacos off with a little bit of coleslaw, hot sauce, some extra barbeque sauce and monterey jack cheese, it was perfect if you asked me. I’m really happy with how this taco turned out and I would for sure make these again.
